2 lbs small red potatoes, quartered with skin on
1/2 cup butter
3 cloves garlic, chopped
1/2 cup milk
Hickory Bacon Salt
Chives, chopped (optional, for garnish)
Bring a large pot of slightly salted water to a boil. Add potatoes and cook until tender but still firm, about 10 minutes. Drain, and place in a large bowl.
Melt butter in microwave safe dish with garlic, then heat up milk for 30 seconds to 1 minute in the microwave. Mash potatoes, milk, garlic and butter together. Keep adding Hickory Bacon Salt to taste - you'll want to use a good amount for this dish to kick up the bacon.
