Cook potatoes over low heat (preferably in a cast iron skillet, but any frying pan will do) in butter until soft on inside and crispy on outside (~15-20 minutes), sprinkling generously with Bacon Salt while cooking.
Turn heat up to medium-low, add peppers and cook a few more minutes.
Push potatoes and peppers to outer edge of skillet, add a little more butter, and drop eggs into the middle of skillet.
Top with more bacon salt followed by cheese.
Cook until eggs are done and cheese is melted. Serve in skillet.
