Baconnaise Grilled Cheese

The Baconnaise Grilled Cheese. It's bacony. It's cheesy. It's melty. And unquestionably delicious.

Ingredients

  • 1/4 cup butter, softened
  • 1 cup freshly grated Parmigiano-Reggiano cheese
  • 8 slices cooked bacon
  • 4 slices Cheddar cheese
  • 8 slices sourdough bread
  • Baconnaise to taste - usually 1-2 Tbsp per sandwich
  • Sliced tomatoes (optional)
  • Fresh arugula (optional)
  • Black pepper (optional)

Instructions

  1. In a small bowl, mash together the butter and Parmesan cheese until evenly blended.
  2. Make sandwiches by placing two slices of bacon and one slice of Cheddar cheese on half of the bread slices. Add tomatoes, arugula and black pepper if you like but these are optional.
  3. Evenly spread Baconnaise on the inside of the remaining slices of bread.
  4. Heat a large skillet over medium heat.
  5. Spread some of the butter mixture on the top of each sandwich.
  6. Place sandwiches butter side down in the skillet. Spread the remaining butter mixture on the other sides.
  7. Cook until golden brown on each side, about 3 minutes per side.
  8. To serve, cut in half diagonally.
