Bacon Salt Roasted Potato Soup

Bacon Salt Roasted Potato Soup


  • 2/3 cup butter
  • 2 tablespoons finely chopped roasted garlic (can be fresh garlic if you want to skip the roasting)
  • 2/3 cup flour
  • 4 cups milk
  • 3 cups half-and-half
  • 4 large baking potatoes, baked, cooled, peeled and cubed
  • 4 -6 green onions, chopped
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup chives, finely chopped
  • 2 Tbsp Original Bacon Salt plus more to taste


  1. In a large soup pot melt butter over medium-high heat.
  2. Add in garlic; cook stirring for about 2 minutes.
  3. Add in flour then stir until smooth (about 1 minute).
  4. Gradually add milk and half and half stirring constantly until thickened and smooth.
  5. Add potatoes and onions; bring to a boil, stirring constantly.
  6. Reduce heat; simmer for 10 minutes.
  7. Add remaining ingredients including Bacon Salt except chives; stir until cheese is melted.
  8. Taste the soup and add more Original Bacon Salt if desired to taste. Serve immediately, garnished with chopped chives.
