Bacon Rubbed Grilled Chicken Over Spinach Salad

Bacon Rubbed Grilled Chicken Over Spinach Salad

Ingredients

  • 3 boneless skinless chicken breast halves
  • 3-4 Tbsp J&D's Bacon Rub
  • 1 (10 ounce) bags baby spinach leaves
  • 1/8 cup parmesan (freshly grated or pre-grated)
  • 1/2 cup baby tomatoes, sliced in half
  • 1/8 cup sunflower seeds
  • Thin slices of red onion and carrots (optional)
  • 1/2 cup J&D's Bacon Croutons
  • Your favorite balsamic vinaigrette or ranch dressing

Instructions

  1. Rub chicken liberally with J&D's Bacon Rub, and let sit overnight refrigerated or for at least 1-2 hours minimum
  2. Heat a medium hot grill, then oil the grill with a paper towel and olive or vegetable oil before placing the chicken on the grill
  3. Cook chicken until it reaches an internal temperature of 165 degrees F, and let sit for 10 minutes
  4. Slice chicken intro strips
  5. Place over spinach, baby tomatoes, red onion and/or carrots, then toss with your favorite dressing
  6. Add parmesan cheese, sunflower seeds and J&D's Bacon Croutons and serve
