20 Minute Bacon Rubbed Salmon

This is a quick and easy dish that gave us a whole new appreciation for salmon. When using Bacon Rub with salmon, it's not essential to rub and leave the meat overnight - you can just put it on right before you cook!
Ingredients

Salmon fillet - any size or portion

J&D's Bacon Rub
Directions
If using an oven:
Preheat oven to 375 degrees F/190 degrees C. If the skin is still on the fillet, line the bottom of a baking pan with tin foil (ungreased), and place salmon skin side down on foil. If no skin is on the salmon, grease the bottom of your baking pan with cooking spray or olive oil.
Rub the salmon generously with J&D's Bacon Rub. Cook in oven until salmon reach an internal temperature of 145 degrees F/63 degrees C. Use a spatula lift the salmon off the tinfoil, leaving the skin on the tinfoil, and serve.
If using a grill:
Preheat on medium-high heat. Use tinfoil to make a foil packet around the salmon with the skin side down and the foil wrapped loosely around the top.
Place tinfoil packet on barbecue, and cook until the salmon reaches an internal temperature of 145 degrees F/63 degrees C. Use a spatula lift the salmon off the tinfoil, leaving the skin on the tinfoil, and serve.
