Southern Potato Salad with Baconnaise

This is a variation on our classic potato salad recipe, but done southern style. It's easy and better than any potato salad you've ever had - even if you hate potato salad, you'll like this one.
Ingredients
2lbs small potatoes skinned
1 cup Baconnaise
2 tablespoons chopped cilantro
2 tablespoons stone ground mustard
Black pepper (or cayenne) to taste
2 hard boiled eggs, chopped (optional)
Bacon Salt
Directions
Boil the potatoes in salted water until cooked but still somewhat firm. Chop into small squares. Toss with Baconnaise, chopped cilantro, mustard, hard boiled egg (optional) and black and/or cayenne pepper to taste (be careful if you use cayenne). Serve warm or refrigerate overnight. Garnish with more parsley, a little more Baconnaise if desired and sprinkle with Bacon Salt.
