Bacon Corn Muffins

Ingredients

1 c. all-purpose flour, sifted

1/4 cup sugar

1 tsp. baking powder

1/2 teaspoon baking soda

1 tsp. Bacon Salt (any flavor)

1 c. cornmeal

1 egg

1 c. buttermilk

2 tbsp. butter, melted

(optional) 4 slices bacon, diced, slightly cooked

Directions

Combine dry ingredients and stir in cornmeal. Beat eggs slightly add buttermilk and melted butter. Mix liquid and dry ingredients and stir only to combine. Fill greased muffin tins two-thirds full. (Optional) Sprinkle with diced bacon. Bake at 425 degrees Fahrenheit for 15 minutes
