Cheesy Bacony Beer Bread

A few of my favorite things

Ingredients

3 cups self-rising flour
2 tbs white sugar
1 tbs brown sugar
1 tsp salt
1 tsp bacon salt
pinch cayenne pepper
1-12 oz beer of choice
4 or 5 strips of bacon in small pieces
2 cups shredded or cubed hard cheese (chedder, jack, provolone, etc)

Directions

Preheat oven to 350 F.  Lightly grease a 10 inch cast iron skillet.

Mix dry ingredients and slowly pour beer.  Carefully stir so as not to lose all the bubbles, but make sure the mix is wetted. 

Slowly fold in the cheese and bacon pieces.

Spoon mixture into the skilet and bake for 45-60 minutes or until the top springs back when lightly pressed. 

Sprinkle extra cheese over the top and quickly brown to finish.
