For centuries, Italian truffle hunters have used very nosy “truffle pigs” to locate tuber aestivum, or the Italian black summer truffle, buried in the oak forests of Umbria. They are often thinly sliced and served over pasta, infused into cheese sauces, or added to chicken, fish, soufflés, omelettes or rice dishes.
