Recipe of the Week: Bacon Salt and Beer Steamed Clams

Ingredients

  • 1/2 Tablespoons Unsalted butter
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 1 tablespoon Thyme finely minced
  • 1 cup dark beer (preferably a porter)
  • 3 lbs. Manila Clams
  • Bacon Salt for seasoning

Instructions

  1. Melt butter in a large pot on medium heat.
  2. Add the onion and a 1-2 teaspoons of Bacon Salt. Allow the onion to carmelize.
  3. Add the garlic and thyme and sautee; 3 minutes.
  4. Add the clams and beer, turn to high heat, and cover the pot. Allow to steam for 6 to 7 minutes or until the clams have opened.
  5. Serve in bowls with fresh bread for mopping up the broth. Add more Bacon Salt to taste.
